Produce crisp, hot saltfish fritters in minutes, using our well seasoned batter comprising saltfish (bacalao), colourful peppers, spring onions and home-mixed seasonings. The experience is perfected with a squeeze of lime or a dollop of pepper jelly. CALLALOO We gently simmer this green leaf with Okras and our own well-seasoned stock to produce a smooth accompaniment to any meat, fish or vegetable dish. Spooned over a slice of Coocoo in Trinidad. COOCOO A piece of this substantial savoury loaf which combines cornmeal, with coconut, herbs and slivers of brightly coloured vegetables, makes a satisfying snack when topped with callaloo.
